You Need:
Raeesa’s Lemon Loaf Premix
2 eggs
150ml oil
250ml buttermilk
Finely grated zest of 1 lemon
Method:
1. Whisk oil, lemon zest, eggs & buttermilk
2. Add premix and mix well
3. Spoon mixture into a medium loaf tin (greased and floured)
4. Bake at 160 degrees for 45-50 minutes / until done
Frosting:
1 cup sifted icing sugar & 3 tbsp lemon juice
Mix together and spoon over cooled loaf
Sprinkle lemon zest on top
Syrup: 60m1 sugar & juice of 2 lemons.
Bring to boil until syrupy and pour over warm loaf
